Green Pea, Feta and Mint Fritters

Ingredients

  • 1/2 cup (125ml) skim milk
  • 2 eggs
  • 1 cup self-raising flour
  • 75g reduced-fat feta, crumbled
  • 2 cups frozen peas, thawed
  • 2 large zucchinis, coarsely grated, squeezed of excess moisture
  • 1/4 cup chopped mint
  • 1 teaspoon finely grated lemon zest
  • lemon wedges, to serve
  • large green salad, to serve

 

Instructions

  1. Whisk together milk and eggs in a large bowl. Gradually whisk in flour, until smooth. Stir through feta, peas, zucchini, mint and lemon zest.
  2. Spray a large frying pan with olive oil and place over medium-high heat. Spoon 1/4 cup of mixture per fritter into the pan, 3 fritters at a time. Cook for 3 minutes each side, or until golden and cooked through. Continue with remaining batter to make 12 fritters, spraying pan with more oil, if necessary. Serve with lemon wedges and a large green salad.
