  Peter Nicholson, the owner and creator of Nicholson’s Fine Foods in Yamba, has continued on his merry way, winning a champion trophy at the Royal Queensland Food & Wine Show (RQFWS) for the third consecutive year. Mr Nicholson entered five sections in the RQFWS’s Cheese & Dairy Produce Show (dessert section) and won three gold and two silver awards for variations of his Belgian chocolate mousse. His Swiss dark variation was named the ‘Dairy Australia Champion Dairy Dessert or Yoghurt of Show’. Mr Nicholson said, while he enjoyed the accolades associated with the many awards his foods have won over the years, that “the reason we enter is to have independent reviews of our products”. “It’s an indicator to us of the quality we are able to produce, and that we are on track to keep our quality parameters at a high level. “We are lucky to have the royal show system to judge Australian made food and wine products. “There is no other independent judging system in Australia and the various shows bring international judges for cheese and wine. “It’s very important that the industry supports the show system: it strengthens Australian food and beverage products by having them critically analysed.”
