Peter Nicholson shares culinary secrets via The Gallery Foundation

Peter Nicholson of Nicholson Fine Foods is sharing more than good cheer this Christmas. As both a board member of The Gallery Foundation and a creator of highly original and award-winning food products, Peter is passionate about art and food. Indeed, he knows more than a few culinary secrets and is sharing one in time for summer, while also promoting a fundraiser that supports the visual arts in the Clarence Valley.
“One of my favourite summer cocktails involves blending a shot of Essence of Hibiscus Flowers with a glass of prosecco. Here I’ve paired it with Symphony Hill ‘Angel Wings’ Prosecco, both of which are available in Christmas hampers that are currently on sale via The Gallery Foundation website,” said Mr Nicholson.
“The cordial has a gorgeous red hue; it’s high in vitamin C content and is an ideal mixer for sparkling wine, gin or just mineral water. Each bottle contains 12 flowers floating in exotic fruit flavoured syrup that will complement sweet and savoury foods. Think flavours of raspberry, plum, watermelon and rhubarb.”
The Gallery Foundation, known for its fundraising events such as Gate to Plate, has been developing alternative fundraising initiatives during 2020. “While we’re unable to run large events, we still love to promote locally-made products,” said The Gallery Foundation Chair, Rod Watters. “And despite the challenges this year, will round out with at least one really good news story and that is the completion of the refurbished and extended Grafton Regional Gallery, a project to which The Gallery Foundation has committed $100,000 in funds for furnishings and fit-out.”
Supporters can purchase gifts via the website thegalleryfoundation.com.au and choose a shipping option or collect their hampers in person from either Grafton Regional Gallery, or from Nicholson Fine Foods in Yamba’s industrial estate.
Prices range from $20 to $129 and include Christmas wrapping and a donation to The Gallery Foundation.
Visitors to the website will also find the organisation’s annual report available for download, plus the reconfigured Foundation Supporters program and updated information around corporate partnerships and bequests.
