Geoff raises the steaks

South Grafton butcher, Geoff Jones of Holiday Coast Meats, has taken out the Class 3 carcass competition (431-500 kilos) live weight section at Casino Beef Week. The winning Speckle steer had also taken out a highly commended, in the led steer competition earlier in the week. Mr Jones has spent the past three years researching the Speckle steer breed, which he believes possess an exceptional eating quality – the next best to the well- known Wagyu beef. Mr Jones said that he purchased four steers at the Beef Week auction sale on the Sunday, which was processed at the Casino abattoir on Monday, judged on Tuesday morning and in his shop on Thursday. “It was an added bonus for me to get the winning carcass,” Mr Jones said. “The marbling quality of the beast was excellent and received a MSA high score of 440,” Holiday Coast Meats will be selling the winning meat this week in their South Grafton shop.
