Mixed Bean and Tuna Salad for One

Ingredients

  • 125g tin four bean mix, rinsed, drained
  • 60g (1/4 cup) semi-dried tomatoes, not in oil, drained, chopped
  • 1 celery stick, diced
  • 1/2 Lebanese cucumber, diced
  • 95g tin tuna in spring water, drained
  • 50g baby rocket leaves
  • 1 tablespoon balsamic vinegar, to taste

Instructions

Combine bean mix, semi-dried tomatoes, celery, cucumber, tuna and rocket in a bowl. Drizzle with balsamic vinegar. Toss to combine.
